Ingredients

1/2 teaspoon Judee’s Organic Ground Ginger

1/4 tsp Judee’s Organic Nutmeg

1/4 tsp Judee’s Organic Cloves

1 1/2 cup flour

2 teaspoons ground cinnamon

1/4 teaspoon salt

1/4 cup salted butter, softened

1/2 cup golden monk fruit
-
1 cup pumpkin puree
-
2 large eggs
-
1 tbsp baking powder
Directions
Combine eggs, softened butter, pumpkin puree, monk fruit, salt, and spices in a mixing bowl until smooth, then add flour and baking powder and combine gently until just combined.
Grease a muffin pan (I like to use the spray coconut oil or you can use paper cups) and bake on 425F for 5 minutes, then reduce oven to 350F and bake another 10-15 minutes until golden on top and cooked through (a toothpick when inserted should come out clean).
Serve or store in an airtight container in the fridge.
