Ingredients

2 cups all-purpose flour

2 tablespoons white sugar

2 teaspoons baking powder

1 teaspoon baking soda

2 eggs, lightly beaten

3 tablespoons vegetable oil or melted butter

2 cups water (or milk if desired)

1/4 cup Judee's Buttermilk Powder
Directions
In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt, eggs and oil (or butter). Gradually stir in the water and Judee’s Buttermilk Powder until a smooth batter forms.
Preheat a lightly greased griddle over medium heat. Pour approximately 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the top surface of each cake and the edges start to become golden brown. Flip over with a spatula and cook until golden brown on the other side. Serve warm with butter or syrup if desired.
