- 1/4 cup Judee's Superfine Caster Sugar
- 1/2 teaspoon salt
- 1/2 cup ice water

- 1/2 cup light brown sugar, packed
- 1 tablespoon lemon juice
- 2 tablespoons all-purpose flour
- 1 teaspoon Judee's Apple Pie Spice
- 1/4 teaspoon salt

Prepare the Crust:
In a large bowl, combine the flour, sugar, and salt
Add the cold, cubed butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, and mix until the dough comes together.
- Divide the dough in half, shape each half into a disc, wrap in plastic wrap, and refrigerate for at least 1 hour.
Preheat the Oven
