Apple Pie Spice Pancakes
Ingredients

1 ½ cup Judee’s Pancake Dry Mix

¼ cup Gluten- Free Rolled Oats
- 1 ½ tsp Judee’s Apple Pie spice
- 1 Large Eggs

½ Cup Milk
- 1 ½ Tbsp Melted Butter
- 1 apple, peeled, cored, and small diced

1 apple, peeled, cored, and small diced
- 1 tsp Judee’s Apple Pie Spice

8 oz (1 ½ cup) dry mix
- ⅓ cup milk
- 2 eggs
- ¼ cup oil (4 Tbsp)

Directions
Mix 1 ½ cups (8oz) of Judee’s Pancake mix with rolled oats, Judee’s Apple Pie Spice melted butter, milk and eggs in a medium bowl.
- Create a small well in the middle of the Dry mix, Add in the eggs, milk, butter. Stir until combined. Fold in diced apples
- In a small bowl, combined diced apples, and apple pie spice. Set aside
- Heat a skillet or pan over medium low heat Once warm, lightly grease with cooking spray or oil of choice
- Using a small ladle, pour approximately 2 Tbsp. of batter onto the pan and cook until the edges set slightly and bubbles form.
- Using a flexible spatula, carefully flip the pancakes over and cook for 30-45 seconds more or until lightly golden brown.
- Remove from the heat and top with the spiced diced apple mixture.
